Green Chile Sauce

- 6 Anaheim chiles shopping list
- 1 T canola oil shopping list
- 2 cups chopped onion shopping list
- 2 garlic cloves, minced shopping list
- 1 T all-purpose flour shopping list
- 1 t ground coriander (cilantro) shopping list
- 1/2 t salt shopping list
- 1 14-oz. can fat-free, less-sodium chicken broth shopping list
How to make it
- Preheat broiler
- Place chiles on foil-lined baking sheet; broil 14 minutes or until blackened & charred, turning after 7 minutes
- Place in heavy-duty zip-lock baggie; seal
- Let stand 15 minutes
- Peel & discard skins
- Cut a lengthwise slit in each chile, remove & discard seeds & tops
- Chop chiles to measure 3/4 cup
- Heat canola oil in medium saucepan over medium-high heat
- Add onion to pan, saute 5 minutes or until tender
- Add garlic, saute for 1 minute
- Stir in flour, cook 1 minute
- Add chiles, coriander, salt & broth; bring to boil
- Reduce heat & simmer 15 minutes, stirring occasionally
- Place 1/2 of chili mixture in blender, blend until smooth
- Return pureed chili mixture to pan; stir well
- Remove from heat; let cool completely
