Green Chile Sauce Recipe

Ingredients
  • 6 Anaheim chiles
  • 1 T canola oil
  • 2 cups chopped onion
  • 2 garlic cloves, minced
  • 1 T all-purpose flour
  • 1 t ground coriander (cilantro)
  • 1/2 t salt
  • 1 14-oz. can fat-free, less-sodium chicken broth

Directions
  1. Preheat broiler
  2. Place chiles on foil-lined baking sheet; broil 14 minutes or until blackened & charred, turning after 7 minutes
  3. Place in heavy-duty zip-lock baggie; seal
  4. Let stand 15 minutes
  5. Peel & discard skins
  6. Cut a lengthwise slit in each chile, remove & discard seeds & tops
  7. Chop chiles to measure 3/4 cup
  8. Heat canola oil in medium saucepan over medium-high heat
  9. Add onion to pan, saute 5 minutes or until tender
  10. Add garlic, saute for 1 minute
  11. Stir in flour, cook 1 minute
  12. Add chiles, coriander, salt & broth; bring to boil
  13. Reduce heat & simmer 15 minutes, stirring occasionally
  14. Place 1/2 of chili mixture in blender, blend until smooth
  15. Return pureed chili mixture to pan; stir well
  16. Remove from heat; let cool completely
