Salmon And Spring Onion Brulee

- 300g salmon fillet, rinsed shopping list
- 4 spring onions, thinly sliced shopping list
- 300ml double cream shopping list
- 300ml milk shopping list
- 8 egg yolks, beaten shopping list
- 3 Tbs chopped parsley shopping list
- 2 Tbs lemon juice shopping list
- 25g finely grated parmesan cheese (i like a bit more, use double) shopping list
- salt and pepper shopping list
How to make it
- Cook the Salmon in a covered steamer for 8-10 minutes (make sure its the same colour throughout)
- Flake the Salmon, discarding the skin and any bones
- Steam the Spring onions until soft
- Then divide the salmon and steamed onions among 6 ovenproof ramekins and put the dishes into a roasting pan
- Pour the cream and milk into a saucepan and bring almost to a boil
- Then gradually beat it into the egg yolks and strain back into the saucepan
- Stir the parsley and lemon juice and season
- Pour the mixture over the salmon and spring onions
- Pour warm water into the roasting pan halfway up the sides of the dishes and bake for 20-25 minutes until the milk/egg mixtures are set but slightly sof at the centre
- Leave to cool, then chill in the refrigerator for 3-4 hours.
- Just before serving, sprinkle the tops with the grated Parmesan Cheese
- Melt and brown the cheese under a hot grill and serve immediately
