Almond Crusted Chicken Breasts Recipe
ALMOND CRUSTED CHICKEN BREASTS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1-1/2 cups sliced almonds lightly toasted
  • 4 boneless skinless chicken breast halves
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup all purpose flour
  • 1 egg beaten with 2 teaspoons water
  • 1/4 cup butter melted
  • 1 teaspoon lemon juice
  • 1-1/2 teaspoons chopped fresh basil

Directions
  1. Lightly flatten chicken breasts then season with salt and pepper then dredge in flour.
  2. Pat off excess flour then dip chicken in beaten egg.
  3. Press each chicken breast in almonds, covering chicken well then place on buttered baking sheet.
  4. Bake at 425 for 15 minutes then combine butter, lemon juice and basil and drizzle over chicken.
