Stuffed Pumpkin Recipe
Perfect for a cool fall night. Serve as a complete meal. You could substitute any ground meat or leave the meat out.

Ingredients
  • 1 1/2 lbs. ground beef
  • 1 medium chopped onion
  • 1 can Cream of Mushroom soup
  • 1 sm. Can of sliced mushrooms-drained
  • 3 T soy sauce
  • 2 T brown sugar
  • Garlic (I use minced)
  • 1 1/2 c. cooked rice
  • 1 can sliced water chestnuts-drained
  • 1 large Pie pumpkin (8-9 lbs.)
  • Veg. oil

Directions
  1. Preheat oven to 350.
  2. In a skillet over medium heat, cook beef and onion until meat is no longer pink; drain.
  3. Add soup, mushrooms, soy sauce and brown sugar. Simmer uncovered for 10 minutes, stirring occasionally.
  4. Stir in rice and water chestnuts.
  5. Wash pumpking, cut a 6 in circle around stem. Remove top and set aside. Discard seeds and loose fibers from inside.
  6. Spoon beef mixture into and replace top. Place on a greased baking pan (with a rim) and rub oil on the outside of the pumpkin.
  7. Bake, uncovered for 1 1/2 hours or until pumpkin is tender.
  8. Scoop out some pumpking with each serving of beef mixture.
