Stuffed Pumpkin

- 1 1/2 lbs. ground beef shopping list
- 1 medium chopped onion shopping list
- 1 can cream of mushroom soup shopping list
- 1 sm. Can of sliced mushrooms-drained shopping list
- 3 T soy sauce shopping list
- 2 T brown sugar shopping list
- garlic (I use minced) shopping list
- 1 1/2 c. cooked rice shopping list
- 1 can sliced water chestnuts-drained shopping list
- 1 large Pie pumpkin (8-9 lbs.) shopping list
- Veg. oil shopping list
How to make it
- Preheat oven to 350.
- In a skillet over medium heat, cook beef and onion until meat is no longer pink; drain.
- Add soup, mushrooms, soy sauce and brown sugar. Simmer uncovered for 10 minutes, stirring occasionally.
- Stir in rice and water chestnuts.
- Wash pumpking, cut a 6 in circle around stem. Remove top and set aside. Discard seeds and loose fibers from inside.
- Spoon beef mixture into and replace top. Place on a greased baking pan (with a rim) and rub oil on the outside of the pumpkin.
- Bake, uncovered for 1 1/2 hours or until pumpkin is tender.
- Scoop out some pumpking with each serving of beef mixture.
