Pollock With Fried Capers

- 4 Pollock steaks shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 2 tablespoons grated lemon peel shopping list
- 3 tablespoons minced chives shopping list
- 5 tablespoons butter shopping list
- vegetable oil shopping list
- 2 tablespoons capers shopping list
How to make it
- Preheat oven to 350.
- Pat fish dry with paper towels then sprinkle with salt and pepper and place in baking dish.
- Sprinkle with lemon peel and chives and dot with butter then bake 12 minutes.
- While fish bakes put 1/2" oil in a small saucepan set over high heat.
- Pat capers dry with paper towels then add capers to hot oil and cook 2 minutes.
- Immediately remove with slotted spoon to paper towels.
- Place on warm plates then divide cooking juices among them and sprinkle with capers.
