Lemon Poppyseed Crisps Recipe
This delicious lemon cookie is quick and easy because you start off using a muffin mix.

Ingredients
  • COOKIES
  • 1/4 cup butter or margarine, melted
  • 2 tablespoons sugar
  • 2 tablespoons milk
  • 1 (7.6 oz.) package Lemon Poppyseed Muffin Mix
  • Sugar
  • GLAZE
  • 3/4 cup powdered sugar
  • 2 to 3 teaspoons milk

Directions
  1. HEAT oven to 350°F. Combine butter, 2 tablespoons sugar and milk in medium bowl; blend well. Add muffin mix; mix until well blended.
  2. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar.
  3. BAKE 6 to 10 minutes or until edges are light golden brown. Cool 2 minutes; remove from cookie sheets. Cool completely.
  4. COMBINE powdered sugar and enough milk for desired drizzling consistency in small bowl; blend until smooth. Drizzle over cooled cookies.
