Braised Pork Medallions With Apples

- 1 whole pork tenderloin sliced into 8 pieces shopping list
- 1/2 teaspoon ground black pepper shopping list
- 1 teaspoon pumpkin pie spice shopping list
- 1 teaspoon vegetable oil shopping list
- 1 small white onion chopped shopping list
- 1 large apple cored and coarsely chopped shopping list
- 1/2 cup apple cider shopping list
How to make it
- Season medallions on both sides with pepper and pumpkin pie spice.
- Heat oil in a large nonstick skillet over medium high heat then brown pork on both sides.
- Remove from pan and reserve then add onion and apples to skillet and sauté until soft.
- Add apple cider to skillet then heat to a simmer.
- Return pork medallions to pan then cover and simmer 5 minutes.
- Serve with hot rice or couscous if desired.
