Beef With Tomatoes Recipe
BEEF WITH TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 2 tablespoons cooking oil
  • 1 teaspoon minced garlic
  • 1 small white onion cut into 1/2" squares
  • 2 green onions cut into 1” pieces
  • 3 small tomatoes peeled and cut into 1” cubes
  • 2-1/2 teaspoons cornstarch dissolved in 2 tablespoons water
  • Marinade:
  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine
  • 2 teaspoons cornstarch
  • 3/4 pound flank steak thinly sliced across the grain
  • Sauce:
  • 1/4 cup chicken broth
  • 1/4 cup ketchup
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon chili garlic sauce

Directions
  1. Combine marinade ingredients in a bowl then add beef and stir to coat.
  2. Let stand for 10 minutes.
  3. Combine sauce ingredients in a bowl.
  4. Place a wok over high heat until hot then add 1-1/2 tablespoons oil swirling to coat sides.
  5. Add beef and stir fry 2 minutes then remove meat from pan.
  6. Add remaining oil to wok swirling to coat sides.
  7. Add garlic, onion and green onions then stir fry 1 minute.
  8. Add tomatoes and sauce then bring to a boil and return meat to wok.
  9. Add cornstarch solution and cook stirring until sauce boils and thickens.
