PEACH AVOCADO SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 1 fresh peach peeled pitted and diced
  • 1 small avocado peeled pitted and diced
  • 1 tomato peeled seeded and diced
  • 1/4 cup diced jicama
  • 3 tablespoons chopped red onion
  • 2 tablespoons chopped fresh cilantro.
  • 1/4 teaspoon crushed red pepper flakes
  • 3 tablespoons fresh lime juice
  • 2 teaspoons olive oil

Directions
  1. In medium bowl mix together peach, avocado, tomato, jicama, onion and cilantro
  2. Whisk together pepper flakes, lime juice and oil then pour over peach mixture and stir gently.
