How to make it

  • Combine crab, sautéed onion, egg, lemon juice, pepper, paprika, pasta de Ají and melted butter.
  • Mix well then form cakes 2” in diameter and place on individual wax paper squares for handling.
  • Refrigerate 1 hour then coat cakes with crumbs and fry in hot oil until brown on both sides.
  • Serve hot with a dollop of homemade mayonnaise.
  • To make pasta de aji open pepper and remove seeds very carefully then chop coarsely.
  • Transfer to food processor then add oil and chop to form the paste.
  • To make mayonnaise mix yolks with one beater of an electric hand mixer at slow speed.
  • Very slowly add the oil and continue to mix at a slow speed.
  • After oil is added mixture should be thick and a light yellow color.
  • Add lemon juice, garlic, salt and pepper then stir and store in refrigerator.
