Chilean Salsa Recipe
CHILEAN SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Miller Estate in Wills Point, Texas in 1992.

Ingredients
  • 1 large tomato peeled and chopped
  • 3 garlic cloves peeled and chopped
  • 1 tablespoon fresh cilantro chopped
  • 1 small fresh jalapeno seeded and chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 1 small lemon juiced

Directions
  1. Chop tomato into squares.
  2. Chop garlic, cilantro and jalapeno in a food processor.
  3. Season with olive oil, black pepper, salt and lemon juice.
  4. Serve at room temperature.

This is called "pebre" in Chile. If using the food processor, just pulse the ingredients. Traditionally they would be chopped by hand.
