Warm Tomato and Feta Bruschetta

- 1 8 oz. loaf of Sour Dough or French bread (baguette) shopping list
- 1/3 cup Italian dressing shopping list
- 1 lb plum tomatoes, seeded and chopped shopping list
- 1/4 cup chopped red onion shopping list
- 1/2 tbsp minced garlic shopping list
- 1 4 oz pkg crumbled feta cheese shopping list
- 3/4 cup fresh shredded parmesan cheese shopping list
How to make it
- Preheat oven to 375.
- Cut bread into 1/2 inch thick slices. Brush one side of each slice with Italian dressing. Place in preheated oven until lightly toasted (about 5 minutes).
- Meanwhile in a medium bowl combine tomatoes, onion, garlic and feta and remaining Italian dressing.
- Spoon mixture onto each toast slice and sprinkle with shredded parmesan.
- Return to oven for 7-10 minutes or until toppings are heated through. Serve immediately.
- **You can increase or decrease the amount of Italian dressing added to the tomato mixture according to your tastes. I have also found that the "basil and sun dried tomato" flavored feta works extremely well in this recipe.**
