Warm Tomato And Feta Bruschetta Recipe
Delicious appetizer that's great for any occasion and it's easy to make with simple ingredients like italian dressing, tomatoes and onions and crumbled feta.

Ingredients
  • 1 8 oz. loaf of Sour Dough or French Bread (baguette)
  • 1/3 cup Italian Dressing
  • 1 lb Plum Tomatoes, seeded and chopped
  • 1/4 cup chopped Red Onion
  • 1/2 tbsp minced Garlic
  • 1 4 oz pkg crumbled Feta Cheese
  • 3/4 cup fresh shredded Parmesan Cheese

Directions
  1. Preheat oven to 375.
  2. Cut bread into 1/2 inch thick slices. Brush one side of each slice with Italian dressing. Place in preheated oven until lightly toasted (about 5 minutes).
  3. Meanwhile in a medium bowl combine tomatoes, onion, garlic and feta and remaining Italian dressing.
  4. Spoon mixture onto each toast slice and sprinkle with shredded parmesan.
  5. Return to oven for 7-10 minutes or until toppings are heated through. Serve immediately.
  6. **You can increase or decrease the amount of Italian dressing added to the tomato mixture according to your tastes. I have also found that the "basil and sun dried tomato" flavored feta works extremely well in this recipe.**
