- 1 pound (2 cups) dry navy beans shopping list
- 2/3 cup brown sugar shopping list
- 1 teaspoon dry mustard shopping list
- 1/4 cup molasses* shopping list
- 1/4 pound salt pork shopping list
- 1 medium onion, sliced shopping list
- Oven 300 degrees shopping list
How to make it
- Rinse beans; add to 2 quarts cold water.
- Bring to boiling; simmer 2 minutes; remove from heat; cover; let stand 1 hour.
- (Or, add beans to water; soak overnight.)
- Add 1/2 teaspoon salt to beans and soaking water; cover; simmer till tender, 1 hour.
- Drain, reserving liquid.
- Measure 2 cups liquid, adding water if needed; mix with sugar, mustard, and molasses.
- Cut salt pork in half; score one half.
- Grind or thin-slice remainder.
- In 2-quart bean pot or casserole, combine beans, onion, and ground salt pork.
- Pour sugar-bean liquid over.
- Top with scored pork.
- Cover; bake at 300 degrees for 5 to 7 hours.
- Add more liquid if needed.
- Serves 8.
- *For more traditional New England baked beans, decrease brown sugar to 1/3 cup and increase molasses to 1/2 cup.
