Enchilada Casserole Recipe

Ingredients

2 cans enchilada sauce

1 pound ground beef

2 teaspoons minced garlic

1 teaspoon cumin

2 teaspoons oregano

Dash pepper

1 taco seasoning packet

1/2 can refried beans

1 cup cheddar cheese

1 cup mozzarella cheese

1 cup Mexican Blend cheese

8 tortillas

Jalapenos, if desired

Directions

Preheat oven to 375

Brown ground beef in large skillet with minced garlic.

Add spices and seasoning packet.

Mix in refried beans and 1/2 can of enchilada sauce.

Pour remaining 1 1/2 cans of enchilada sauce into a large bowl.

Dip one of the tortillas into the sauce so it's covered.

Place 2 dipped tortillas on the bottom of a casserole dish.

Spoon in 1/3 of meat mixture.

Add jalapenos here, if desired.

Top with 1 cup of cheese.

Repeat twice with layers of 2 tortillas, meat and cheese.

Top with final 2 tortillas and pour any remaining enchilada sauce over top.

Cover with foil and bake 20 minutes.

Let sit for 10 minutes.

Slice and serve with hot sauce and sour cream.
