Enchilada Casserole

- 2 cans enchilada sauce shopping list
- 1 pound ground beef shopping list
- 2 teaspoons minced garlic shopping list
- 1 teaspoon cumin shopping list
- 2 teaspoons oregano shopping list
- Dash pepper shopping list
- 1 taco seasoning packet shopping list
- 1/2 can refried beans shopping list
- 1 cup cheddar cheese shopping list
- 1 cup mozzarella cheese shopping list
- 1 cup Mexican blend cheese shopping list
- 8 tortillas shopping list
- jalapenos, if desired shopping list
How to make it
- Preheat oven to 375
- Brown ground beef in large skillet with minced garlic.
- Add spices and seasoning packet.
- Mix in refried beans and 1/2 can of enchilada sauce.
- Pour remaining 1 1/2 cans of enchilada sauce into a large bowl.
- Dip one of the tortillas into the sauce so it's covered.
- Place 2 dipped tortillas on the bottom of a casserole dish.
- Spoon in 1/3 of meat mixture.
- Add jalapenos here, if desired.
- Top with 1 cup of cheese.
- Repeat twice with layers of 2 tortillas, meat and cheese.
- Top with final 2 tortillas and pour any remaining enchilada sauce over top.
- Cover with foil and bake 20 minutes.
- Let sit for 10 minutes.
- Slice and serve with hot sauce and sour cream.
