How to make it

  • Preheat oven to 375
  • Brown ground beef in large skillet with minced garlic.
  • Add spices and seasoning packet.
  • Mix in refried beans and 1/2 can of enchilada sauce.
  • Pour remaining 1 1/2 cans of enchilada sauce into a large bowl.
  • Dip one of the tortillas into the sauce so it's covered.
  • Place 2 dipped tortillas on the bottom of a casserole dish.
  • Spoon in 1/3 of meat mixture.
  • Add jalapenos here, if desired.
  • Top with 1 cup of cheese.
  • Repeat twice with layers of 2 tortillas, meat and cheese.
  • Top with final 2 tortillas and pour any remaining enchilada sauce over top.
  • Cover with foil and bake 20 minutes.
  • Let sit for 10 minutes.
  • Slice and serve with hot sauce and sour cream.

    Good recipe! I added some chopped onions to the meat and garlic as it was browning for some extra flavor. Well done!
