Beef Jerky and Onion Soup

- 3 tablespoons olive oil shopping list
- 4 large white onions chopped shopping list
- 2 tablespoons paprika shopping list
- 1 winter squash chopped shopping list
- 1/2 pound beef jerky chopped shopping list
- 1 teaspoon cumin shopping list
- 1 teaspoon oregano shopping list
- 6 cups beef broth shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 8 medium eggs shopping list
- 2 tablespoons parsley chopped shopping list
- 1 lemon juiced shopping list
- 1 large juiced shopping list
How to make it
- Saute onion, squash and paprika in oil for 10 minutes.
- Add jerky, cumin, oregano and broth then simmer 25 minutes.
- Season with salt and pepper.
- Poach eggs in water for 5 minutes.
- Stir lemon juice and orange juice into soup then simmer 1 minute.
- Place an egg in a soup bowl then top with soup and sprinkle with parsley and serve.
