This recipe comes from the Farmer Estate in Quinlan, Texas in 1984.

Ingredients
  • 1/4 cup tomato juice
  • 2 tablespoons lemon juice
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon freshly ground black pepper
  • 6-1/2 ounce can water packed tuna well drained
  • 1 tablespoon red pepper minced
  • 1 small carrot shredded
  • 1 green bell pepper halved lengthwise and seeded

Directions
  1. In small bowl combine tomato juice, lemon juice, onion powder, paprika and black pepper.
  2. In another bowl combine tuna, carrot and minced pepper.
  3. Pour dressing into tuna salad and mix thoroughly then fill the green pepper halves.
