Dried Fruit And Wine Brisket Recipe
This recipe comes from the Jacobsen estate that I purchased in McKinney, Texas in 1990. I have not made this but my sister has and her family and mine love it. Great with garlic mashed potatoes and green beans. Enjoy

Ingredients
  • 4 pound brisket
  • 2 cups mixed dried fruit
  • 1-1/2 cups stock
  • 2 medium white onions sliced
  • 1 cup medium dry white wine
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Brown meat in heavy pot then add onions and brown over medium heat.
  2. Add wine, stock and dried fruit then bring to a simmer.
  3. Season with salt and pepper then simmer covered for 2-1/2 hours.
  4. Remove roast from pot to slicing board then skim fat from gravy and slice meat.
  5. Arrange on platter and top with fruited gravy.
