How to make it

  • Brown meat in heavy pot then add onions and brown over medium heat.
  • Add wine, stock and dried fruit then bring to a simmer.
  • Season with salt and pepper then simmer covered for 2-1/2 hours.
  • Remove roast from pot to slicing board then skim fat from gravy and slice meat.
  • Arrange on platter and top with fruited gravy.
