Vegetable Puffs

- 2 white onions chopped shopping list
- 1 pound fresh mushrooms coarsely chopped shopping list
- 4 tablespoons vegetable oil shopping list
- 40 ounces frozen chopped spinach defrosted and drained shopping list
- 8 carrots peeled and grated shopping list
- 8 eggs lightly beaten shopping list
- 1 teaspoon salt shopping list
- 4 tablespoons chicken soup mix shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 cup matzo meal shopping list
How to make it
- Preheat oven to 350 then grease 3 muffin tins.
- Sauté onions and mushrooms in skillet and set aside.
- Add spinach, carrots, onions, mushrooms, salt, pepper, soup mix and matzo meal to beaten eggs.
- Mix thoroughly after each addition then put mixture into pan and bake 45 minutes.
- Release puffs from muffin tins with spatula then serve warm.
