Asparagus Egg Casserole Recipe
This is a wonderful vegetarian gluten free dish

Ingredients
  • 2 lbs fresh asparagus
  • 4 hard boiled eggs
  • Cream suace
  • 1 tbsp c Rice Flour
  • 2 tbsp butter
  • 1 cup milk
  • grated cheese (try muebster and cheddar)

Directions
  1. cut asparagus in 2 inch pieces.
  2. Cook in stemer until tender
  3. put in 7 x 11 inch dish
  4. cover with sliced eggs
  5. make cream sauce
  6. melt butter in pan
  7. add rice flour stir constantly for 2 minutes over med heat
  8. add milk stir constantly until thickens
  9. pour over asparagus and eggs
  10. top with grated cheese
  11. bake uncovered 350 degrees for 15 minutes or until golden brown
