Easy Chicken Enchiladas Recipe
Super easy and delicious. It does call for a pint of half and half, but I can't bring myself to substitue anything else. It's just so good as it is.

Ingredients
  • 1/4 C Chopped Green Onions
  • 1/4 C Butter
  • 3 Tomatoes, peeled and chopped or 1 can diced tomatoes
  • 3 - 4 Cups Cooked Diced Chicken
  • 1 Chicken Bouillon Cube (I use the chicken seasoning paste that comes in a jar.)
  • 12 Flour Tortillas
  • 1/2 LB Monterey Jack Cheese, Grated
  • 1/2 Lb Cheddar Cheese, Grated
  • 1 PT Half and Half

Directions
  1. Preheat oven to 305 degrees.
  2. Saute tomatoes, onion, butter, and bouillon cube for 5 minutes.
  3. Simmer chicken in sauce for 10 minutes.
  4. Fill Tortillas with 2 - 3 T chicken mixture.
  5. Roll, place in oblong baking pan
  6. Cover with grated cheese.
  7. Pour half and half over top.
  8. Cover with foil and bake 30 - 40 minutes
  9. Remove foil and brown another 15 minutes.
