Panera Bread Broccoli Cheese Soup

- Panera bread broccoli cheese soup shopping list
- 1 tablespoon butter, melted shopping list
- 1/2 medium onion, chopped shopping list
- 1/4 cup melted butter shopping list
- 1/4 cup flour shopping list
- 2 cups half-and-half shopping list
- 2 cups chicken stock or bouillion shopping list
- 1/2 lb. fresh broccoli shopping list
- 1 cup carrots, julienned shopping list
- salt and pepper to taste shopping list
- 1/4 teaspoon nutmeg shopping list
- 8 ozs. grated sharp cheddar shopping list
- Saute onion in butter. Set aside. Cook melted butter and flour shopping list
- using a whisk over medium heat for 3-5 minutes. Stir constantly and shopping list
- slowly add the half-and-half (this is called making a roux). Add shopping list
- the chicken stock whisking all the time. Simmer for 20 minutes. shopping list
- Add the broccoli, carrots and onions. Cook over low heat until the shopping list
- veggies are tender for 20-25 minutes. Add salt and pepper. The soup shopping list
- should be thickened by now. Pour in batches into blender and puree. shopping list
- Return to pot over low heat and add the grated cheese; stir until shopping list
- well blended. Stir in the nutmeg and serve. shopping list
