Crockpot Thai Chicken Recipe
Wasn't sure about this one. It came out great, though! Kinda spicy, but not-so-much, with a mild peanut buttery flavor and a sweet after taste from the coconut milk. I will add cayenne on the next go.

Ingredients
  • chicken, one half whole bird
  • salt and pepper to taste
  • 16 oz can coconut milk
  • 16-20 oz fresh spicy salsa
  • 2 chopped jalapenos
  • 1/2 cup lime juice
  • 4 Reeces's peanut butter cups
  • 1 bunch of cilantro, chopped

Directions
  1. Place chicken in bottom of slow cooker
  2. Salt and pepper to taste
  3. Top chicken with peanut butter cups
  4. Add coconut milk, fresh salsa, peppers, lime juice and cilantro
  5. High 4-6, low6-8
  6. Over starch of choice, I used whole wheat thin pasta
