Love this for sandwiches or all by it's self!. I make a whole roaster chicken in my crockpot then use the chicken for all different things, this is one of those things. I got the idea from Safeways deli department.

Ingredients
  • About 3 cups chopped chicken
  • About 1/2-3/4 cup grapeseed mayo (Veganaise)
  • 1/4-1/2 cup or so craisins
  • 1/4-1/2 cup chopped pecans
  • A pinch or taragon
  • Kosher salt
  • Pepper

Directions
  1. Mix all ingredients together and serve as a sandwich or by it's self.
  2. Done.
