Red Bean Ice Cream Version 2

- 1/2 cup sugar shopping list
- 3 egg yolks shopping list
- 1 cup milk shopping list
- 1 1/2 cups sweetened red bean paste shopping list
- 1 1/2 cups heavy whipping cream shopping list
How to make it
- Beat sugar and egg yolks in a large bowl until it's pale and yellow. Set aside.
- Bring the milk to a boil in a heavy saucepan and then turn off heat.
- Slowly whisk hot milk into the yolk and sugar mixture. Pour the entire mixture back into the heavy saucepan.
- Put the saucepan on a very low heat and stir constantly, until it thickens. ***DO NOT LET IT BOIL!! (You are basically making a custard, here.)
- Take the mixture off the heat and whisk in the red bean paste really well. Strain the whole mixture into a large bowl to remove lumps.
- Let it cool for a few minutes and then stir in the cream. Cover and refrigerate overnight.
- Process according to your ice cream maker's instructions.
- Freeze before serving.
