How to make it

  • put the drippings in a large heavy skillet
  • the skillet should be hot already
  • heat till hot...using low heat
  • add the flour very slowly, stirring constantly
  • cook low heat till it turns brown...keep stiring
  • start adding your liquid,,,,slowly and constantly stir
  • untill thick,,
  • when the flour and drippings are cookingyou can let this get light or dark brown in color BEFORE adding the milk, water or broth
  • go slow and stir to incorporate so no lumps come.
  • once all is combined, turn up heata little to a rolling boil
  • and stir often for about 5 minutes, to cook the flour well
