Crab Cakes Recipe
Crab cakes are one of my most favorite foods of all. Try to use fresh ingredients. This is an old recipe from the West coast--don't remember where I got it. enjoy.

Ingredients
  • 1 lb. crab meat pieces
  • 1/2 cup red bell pepper , diced
  • 1/2 cup yellow bell pepper, diced
  • 1/4 cup diced jalapeno, or to taste
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup breadcrumbs
  • 1 egg, stirred with fork
  • olive oil
  • Lemon quarters to place on serving plates. Also, a red pepper coulis is absolutely perfect. (I ate crabcakes with the 'red pepper coulis to die for ' at the River Cafe in NYC ) I'll try to find a recipe. and post.
  • The prep time does not include picking the meat out of the crab.

Directions
  1. In a mixing bowl combine the crab and the veggies, pour egg over veggies and stir to combine. Now fold in the breadcrumbs.
  2. Prepare a baking sheet with parchment paper. With the olive oil, smear both the baking sheet, and the parchment.
  3. Form small patties with the crab mixture and place the patties on the baking sheet. Bake at 375 F for 10 minutes, or when the crabcakes are a bit browned. Don't overcook, It is such a delicacy.
  4. While crabcakes are browning wash lemons and quarter.

Oooh yeah GF - I love crab cakes...and really like your jalapeno and cilantro party guests here. I also think your red pepper coulis idea is fab...and what a tasty and pretty plate it would make. Thanks hon - I hope your week starts out sweetly. :) Vickie

After I submitted this recipe, I googled 'red pepper coulis', and there are Many many choices from which to choose. you can't go wrong! oohlala! trish
