How to make it

  • In a saucepan, cover squash with apple cider. Let simmer until squash is very tender.
  • Drain the juice and reserve
  • Place squash into buttered baking dish.
  • Mix onion, seasonings, beat egg and cream .
  • Pour cream mixture over squash.
  • Add 1/2 reserved apple cider.
  • Bake at 350 until it is set. Can be made the day ahead and reheated.
