Butternut Squash Gratin - Turek Farms Recipe

Ingredients

1 Butternut squash, peeled, diced or grated

1 cup Apple Cider ( may need more if you use a big squash)

2 tbsp minced onion

2 tsp fresh ginger grated

1 tsp nutmeg

1/4 tsp salt

1/4 tsp pepper

1 cup whipping cream

2 eggs

Directions

In a saucepan, cover squash with apple cider. Let simmer until squash is very tender.

Drain the juice and reserve

Place squash into buttered baking dish.

Mix onion, seasonings, beat egg and cream .

Pour cream mixture over squash.

Add 1/2 reserved apple cider.

Bake at 350 until it is set. Can be made the day ahead and reheated.
