Our Favorite Chicken Enchiladas

- 10-12 flour tortillas shopping list
- 1-2 C. cooked chicken (leftovers), shredded shopping list
- 1 can cream of chicken soup shopping list
- 1/2 C. sour cream shopping list
- 1 C. salsa (divided) shopping list
- 1 C. shredded cheese shopping list
- 1 T. taco seasoning shopping list
- onions, finely diced (optional) shopping list
How to make it
- Preheat oven to 350. Set chicken aside. Combine cream of mushroom soup, sour cream, onion, taco seasoning, 2/3 C. salsa, 1/3 C. cheese. Mix well. Spread mixture onto tortilla; top with chicken and cheese; roll. Pack rolled tortillas into square casserole dish. Use remaining mix to spread on top of rolled tortillas, then dot remaining salsa onto the mixture. Cover with remaining cheese. Bake uncovered until heated through, approximately 15-20 minutes.
