Our Favorite Chicken Enchiladas Recipe
This is a simple and yummy way to use those chicken leftovers.

Ingredients
  • 10-12 flour tortillas
  • 1-2 C. cooked chicken (leftovers), shredded
  • 1 can cream of chicken soup
  • 1/2 C. sour cream
  • 1 C. salsa (divided)
  • 1 C. shredded cheese
  • 1 T. taco seasoning
  • onions, finely diced (optional)

Directions
  1. Preheat oven to 350. Set chicken aside. Combine cream of mushroom soup, sour cream, onion, taco seasoning, 2/3 C. salsa, 1/3 C. cheese. Mix well. Spread mixture onto tortilla; top with chicken and cheese; roll. Pack rolled tortillas into square casserole dish. Use remaining mix to spread on top of rolled tortillas, then dot remaining salsa onto the mixture. Cover with remaining cheese. Bake uncovered until heated through, approximately 15-20 minutes.
