This is a quick and easy dish to prepare. Great with corn and black beans.

Ingredients
  • 6 chicken breast
  • 3 medium tomatoes
  • 1 bell pepper
  • 1 medium onion
  • 1 jalepeno pepper
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup finely shredded white american cheese

Directions
  1. Preheat oven to 400
  2. wash and place chicken in a 10x13 glass dish
  3. mix salt, black pepper, paprika, and garlic powder in a small prep dish
  4. sprinkle mixture over chicken and place in oven for 30 minutes
  5. while the chicken is cooking dice tomatoes, bell pepper, onion, and jalepeno and place in a bowl and toss
  6. remove chicken from oven (make sure all pink is gone) and spoon on the diced mixture
  7. cook chicken 10 more minutes
  8. then sprinkle cheese on top of chicken
  9. cook 5 minutes and your done
  10. turn the oven off and let the dish set in the oven while you set the table
  11. serve
