this sauce goes with freshly caught perch deep fried on a toasted hotdog roll.You will wonder how you ever ate perch without it

Ingredients
  • 1/2 cup white distilled vinegar
  • 3 eggs
  • 2 teaspoons veg oil
  • 2/3 cup white vinegar
  • 1 tablespoon dry mustard
  • 1 tablespoon melted butter
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup milk
  • 3 cups water

Directions
  1. in bowl mix eggs,oil,sugar,mustard,butter,flour,salt,pepper.
  2. mix in milk and water.
  3. set aside
  4. heat vinegar in double boiler
  5. gradually add egg mix into hot vinegar
  6. stirring constantly
  7. stir until desired thickness.
  8. spoon sauce over cooked perch on a toasted hotdog roll
  9. UNBELIEVABLE!!!!!!
