How to make it

  • Mix all ingredients except pie shell in blender. Pour mixture into pie shell. Bake 350 for 35 to 45 minutes or until inserted knife comes out clean.

    I've never had success with coconut custard, but this pie was the exception! Made for Thanksgiving and it was superb. I think the "secret" was in blending the coconut in with liquid ingredients. I garnished with more coconut and sprinkled with nutmeg, and everyone loved it. Thanks!

    I just took mine out of the oven! I added a pinch of nutmeg and some vanilla extract and a touch of coconut extract. It is soooo good! A tip I read from someone else.... brush the crust with egg white before filling...it keeps the crust from getting soggy. Also, use a quick read thermometer and cook until the filling is 165 degrees and take it out. No more or it will overcook. It works perfectly.

    I loved this pie! The only change I made was 3/4 c of Splenda instead of the sugar. Turned out wonderful. This will be a great pie for the holidays.

    The best pie ever! your guests will love this! I use 1 cup milk as you will have to much filling for a 9in deep dish. I bake at 325 for 50 mins. Gonna try it with coconut milk tonite, will post results. I can live off this pie. I eat it for dessert and breakfast when I make one. To die for!

    I wish people would try the recipes before commenting on them. How can you rate when you haven't tried it? I tried this recipe and baked it yesterday but it was still in a liquid state beneath the coconut. I placed it in the fridge over night in hopes of it setting. Still liquidy this morning and am baking again in hopes that it cooks to a more solid state. I'd decrease the milk a little and increase the corn starch.

    I have tried this recipe, the only thing I changed was to use less sugar, and since I don't have a blender , I just used my mixer. This is exactly the type of custard pie I have been searching for, it turned out great. My family certainly raved about it, was gone in less than a day. Thanks for the great recipe.

    I have been wanting coconut custard pie for years. I live in south Florida and you can't find them here. I haven't even been able to find the Mrs. Smith frozen one. So glad I searched it on this site. This sounds exactly like the one I used to make. Thanks for sharing.
