Balsamic Succotash

- 2 tablespoons butter shopping list
- 1 cup chopped yellow onion shopping list
- 1 garlic clove, minced shopping list
- 2 cups frozen corn kernels shopping list
- 1/2 cup chopped red bell pepper shopping list
- 1 teaspoon dried basil shopping list
- 1 (10-ounce) package frozen baby lima beans shopping list
- 1/2 cup fat-free, less-sodium chicken broth or vegetable broth for vegetarian recipe shopping list
- 1/2 teaspoon sugar shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1 tablespoon balsamic vinegar shopping list
How to make it
- Melt butter in a large nonstick skillet over medium heat.
- Add onion and garlic; cook 3 minutes or until onion softens, stirring occasionally.
- Add corn, bell pepper, basil, and beans; cook 4 minutes, stirring
- occasionally.
- Add broth, sugar, salt, and black pepper; cook 7 minutes
- or until liquid almost evaporates.
- Remove from heat, and stir in vinegar.
