Ingredients
  • 2 tablespoons butter
  • 1 cup chopped yellow onion
  • 1 garlic clove, minced
  • 2 cups frozen corn kernels
  • 1/2 cup chopped red bell pepper
  • 1 teaspoon dried basil
  • 1 (10-ounce) package frozen baby lima beans
  • 1/2 cup fat-free, less-sodium chicken broth or vegetable broth for vegetarian recipe
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar

Directions
  1. Melt butter in a large nonstick skillet over medium heat.
  2. Add onion and garlic; cook 3 minutes or until onion softens, stirring occasionally.
  3. Add corn, bell pepper, basil, and beans; cook 4 minutes, stirring
  4. occasionally.
  5. Add broth, sugar, salt, and black pepper; cook 7 minutes
  6. or until liquid almost evaporates.
  7. Remove from heat, and stir in vinegar.
