Steamed Cranberry Pudding Recipe

Ingredients
  • 1 1/3 c flour
  • 1 tsp baking powder
  • 1/2 cup molasses
  • 2 tsp baking soda
  • 1/2 cup boiling water
  • 1 cup cranberries
  • Sauce:
  • 1/2 cup white sugar
  • 1/4 cup butter
  • 1/2 cup cream
  • 1/2 tsp vanilla

Directions
  1. Stir soda into molasses and set aside.
  2. Boil the cranberries in the water for 5 minutes.
  3. Mix all ingredients together and pour into a greased 28 oz juice can.
  4. Steam for one hour.
  5. SAUCE: Mix all sauce ingredients together and boil for a few minutes.
  6. Pour over warm slices rounds) of pudding
  7. (To steam-- place foil loosely over the top of the can.
  8. Secure with twine to hold in place.
  9. Place juice can in pot of boiling water filled about 1/2 full of water and continue to boil for about 50 mins--add more water as necessary)
