Ingredients
  • 3 lbs chicken parts
  • Bouquet Garni ( wrap together in a piece of leek,: garlic clove, fresh parsley, thyme, bay leaf, slice of lemon, etc ) many recipes on the Net
  • onion diced, qauntity as desired
  • celery diced, etc.
  • carrots diced , etc.
  • garlic if you like
  • red wine- not sweet- enough to cover

Directions
  1. Cut up chicken
  2. Add diced veges and wine to cover
  3. Cover and let marinde in refrigerator 3 days
  4. Remove chicken, pat dry and salt and pepper
  5. Reserve other ingredients
  6. Reduce wine by 1/2 by cooking wine in pot, set aside.
  7. Brown seasoned chicken in skillet
  8. Add drained diced veges and reduced wine and cook a few minutes.
  9. Sprinkle on a little flour over chicken and veges which helps make a gravy
  10. Cook and stir a few minutes
  11. Cover all and bake in a 350 oven for 45 minutes
  12. Correct seasonings if desired
