These are very impressive bars bursting with great apricot and nut flavors. Easy but good. Enjoy

Ingredients
  • 1 cup butter
  • 1/2 cup granulated sugar
  • 2 cups flour
  • Filling:
  • 1-1/3 cup dried apricots
  • 2/3 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cup brown sugar packed
  • 4 large eggs
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar

Directions
  1. Preheat oven to 350.
  2. Cream butter and sugar then stir in flour until crumbly then pack into rectangular baking pan.
  3. Bake 25 minutes or until lightly browned.
  4. Cook apricots in small amount of water until softened.
  5. Drain and process until pureed in food processor.
  6. Beat brown sugar and eggs together until well blended then add dry and mix until blended.
  7. Add vanilla, apricots and nuts then mix until blended and spread over baked layer.
  8. Bake 25 minutes until golden then cool and sprinkle with powdered sugar then cut into pieces.
