How to make it

  • For the glaze:
  • In large saucepan bring apple cider and quartered apples to a boil. Continue boiling for about 3 hours until reduced to one pint. The resulting glaze will be intensely flavored, rich, and thick.
  • Bring the bird to room temperature. Letting it sit out of the fridge for a couple hours is fine.
  • Heavily salt and pepper all over the exterior. Grill it as you usually do.
  • About half way through grilling, begin glazing the chicken with the reduction. Use a basting/paint brush. Continue to do this every 10 minutes or so until done. Glaze both sides of chicken.
  • Serve with remaining glaze sauce on the side.
  • That’s It! This is a good recipe. I’d serve it with roast corn and grilled spring onions.

    I will be trying this with a Beer-Butt Chicken recipe and uses hard apple cider (Strongbow) instead of beer
