  • 1 Gallon Fresh Apple cider (you can find it this time of year in the grocery store produce section)
  • 2 Apples quartered
  • 1 or 2 chickens, quartered. Allow ¼ to ½ per person
  • Salt and coarse ground pepper

Directions
  1. For the glaze:
  2. In large saucepan bring apple cider and quartered apples to a boil. Continue boiling for about 3 hours until reduced to one pint. The resulting glaze will be intensely flavored, rich, and thick.
  3. Bring the bird to room temperature. Letting it sit out of the fridge for a couple hours is fine.
  4. Heavily salt and pepper all over the exterior. Grill it as you usually do.
  5. About half way through grilling, begin glazing the chicken with the reduction. Use a basting/paint brush. Continue to do this every 10 minutes or so until done. Glaze both sides of chicken.
  6. Serve with remaining glaze sauce on the side.
  7. That’s It! This is a good recipe. I’d serve it with roast corn and grilled spring onions.
