- 4 talpia filets shopping list
- 3 cups of cooked rice ( this is a guess on the amt i used leftovers) shopping list
- 1/2 cup chopped celery shopping list
- 1/2 cup chopped onion shopping list
- 1 large tomato chopped (juice and all) shopping list
- 1 large zuccini cut in fat half circles shopping list
- 1 bag baby spinach shopping list
- 1 tablespoon chopped garlic shopping list
- 1 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1/2 tsp rosemary shopping list
- 1/2 tsp oregano shopping list
- 1/2 tsp parsley shopping list
- 1/4 tsp paprika shopping list
- lemon zest to taste shopping list
- squeeze lemon juice to taste shopping list
- butter shopping list
How to make it
- Preheat oven to 400
- in a large skillet lightly saute: celery, onion, tomato, zuccini, spinach and garlic. you want them to be a little firm they will be baked in awhile. :o)
- in bowl mix all spices together
- layer all cooked rice evely in ungreased baking dish
- place fish filets on rice
- sprinkle with half of your spices
- add some lemon zest and juice
- layer all sauted veggies
- sprinkle with remaining spices
- then layer pats of butter over all veggies
- cover with foil and bake for 30 mins
