How to make it

  • Preheat oven to 400
  • in a large skillet lightly saute: celery, onion, tomato, zuccini, spinach and garlic. you want them to be a little firm they will be baked in awhile. :o)
  • in bowl mix all spices together
  • layer all cooked rice evely in ungreased baking dish
  • place fish filets on rice
  • sprinkle with half of your spices
  • add some lemon zest and juice
  • layer all sauted veggies
  • sprinkle with remaining spices
  • then layer pats of butter over all veggies
  • cover with foil and bake for 30 mins
