I made this recpie up tonight. I knew I had to use my talpia and it hit me to do this. let me know what you think. My daughters actually ate everything. :o)

Ingredients
  • 4 talpia filets
  • 3 cups of cooked rice ( this is a guess on the amt i used leftovers)
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 large tomato chopped (juice and all)
  • 1 large zuccini cut in fat half circles
  • 1 bag baby spinach
  • 1 tablespoon chopped garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/4 tsp paprika
  • lemon zest to taste
  • squeeze lemon juice to taste
  • butter

Directions
  1. Preheat oven to 400
  2. in a large skillet lightly saute: celery, onion, tomato, zuccini, spinach and garlic. you want them to be a little firm they will be baked in awhile. :o)
  3. in bowl mix all spices together
  4. layer all cooked rice evely in ungreased baking dish
  5. place fish filets on rice
  6. sprinkle with half of your spices
  7. add some lemon zest and juice
  8. layer all sauted veggies
  9. sprinkle with remaining spices
  10. then layer pats of butter over all veggies
  11. cover with foil and bake for 30 mins
