Mexican Casserole

- 1 pound lean ground beef shopping list
- 3/4 cup onion, chopped shopping list
- 16 ounces kidney beans, drained shopping list
- 11 ounces corn, drained shopping list
- 8 ounces taco sauce shopping list
- 1/2 cup ripe olives, chopped shopping list
- 2 teaspoons chili powder shopping list
- salt to taste shopping list
- 1/2 teaspoon ground pepper OR crushed red pepper shopping list
- 1 cup cheddar cheese, shredded shopping list
- 1 cup crushed nacho chips shopping list
How to make it
- Mix together the beef and onion.
- Microwave on HIGH for 7 minutes.
- Stir in beans, corn, taco sauce, olives, chili powder and salt & pepper
- Microwave on HIGH for 7 minutes.
- Sprinkle with shredded cheddar and nachos chips.
- Microwave on HIGH for 1 minute longer.
