Ingredients
  • 12 Pieces of Round Steak(each about 3"x5"),pound until very thin and flat.
  • Mix:
  • 1 Cup Mashed Potatoes.
  • 1/4 Cup Chopped Smoked Ham.
  • 1/2 Cup Sauteed Mushrooms.
  • 1 Cup Finely Chopped Hard Cooked Egg.
  • 1/4 Cup Chopped Parsley.
  • Pinch of Salt and Pepper
  • Place a heaping spoonful of this stuffing on each beef piece.
  • Roll up and tie securely with string.
  • Roll the pieces in flour and brown on all sides in butter.
  • Add 1/2 Cup Good Sherry,1/2 Cup Beef Bouillon to the pan that you browned the steak rolls in.
  • Cover and simmer gentlly for about 2 hours.
  • Remove the meat rolls to a hot platter.
  • Skim any fat from pan.
  • Add 1 pint sour cream,stirring to blend .
  • Do not let it boil.
  • Heat through and pour over the steak rolls, to which the string as been removed.
