Apricot Frangipane Cake Recipe
This is a very impressive cake and so tasty and moist you will impress yourself. This recipe comes from my Aunt Maggie's collection that I inherited in 1980. She was an amazing cook and baker, especially her cakes and candies. Enjoy

Ingredients
  • 1 stick butter softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon almond extract
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup ground almonds
  • 2 eggs
  • 8 ripe apricots halved and pitted
  • 2 tablespoons apricot jam
  • 2 teaspoons water
  • 1/4 cup sliced almonds

Directions
  1. Preheat oven to 350 then line round pan with wax paper and spray with cooking spray.
  2. Beat butter with sugar until pale and fluffy then beat in almond extract.
  3. Mix flour, baking powder and ground almonds in a bowl.
  4. In a separate bowl whisk eggs until pale and thick.
  5. Fold dry ingredients into butter mixture alternately with whisked eggs.
  6. Spoon mixture into prepared pan and arrange apricots rounded side up on top.
  7. Bake 35 minutes then cool cake in pan for 10 minutes.
  8. Carefully remove cake from pan then lift off wax paper and place apricot side up on wire rack.
  9. Cool 20 minutes then melt apricot jam with water in a small pan.
  10. Press mixture through a sieve into a bowl.
  11. Brush top of cake with apricot glaze and scatter almonds on top.
