How to make it

  • Heat butter and oil in skillet then add shallots and garlic.
  • Cook stirring occasionally for 5 minutes or until soft.
  • Add wine to pan and boil until reduced by half.
  • Cut each scallop into 2 slices then add to skillet and cook stirring occasionally for 3 minutes.
  • Stir in lemon juice, parsley, salt and pepper then garnish with parsley and serve immediately.
