Scallops In White Wine Recipe
This is a very nice scallop recipe that can be used as a main dish for 4 people or as an appetizer for 6 people. There are some great flavors going on in this dish. Enjoy

Ingredients
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 shallots chopped
  • 1 large garlic clove crushed
  • 1/2 cup dry white wine
  • 1 pound scallops
  • 1 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Flat leaf parsley sprigs to garnish

Directions
  1. Heat butter and oil in skillet then add shallots and garlic.
  2. Cook stirring occasionally for 5 minutes or until soft.
  3. Add wine to pan and boil until reduced by half.
  4. Cut each scallop into 2 slices then add to skillet and cook stirring occasionally for 3 minutes.
  5. Stir in lemon juice, parsley, salt and pepper then garnish with parsley and serve immediately.
