Scallops In White Wine

- 2 tablespoons unsalted butter shopping list
- 1 tablespoon olive oil shopping list
- 2 shallots chopped shopping list
- 1 large garlic clove crushed shopping list
- 1/2 cup dry white wine shopping list
- 1 pound scallops shopping list
- 1 tablespoons fresh lemon juice shopping list
- 2 tablespoons chopped fresh parsley shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- flat leaf parsley sprigs to garnish shopping list
How to make it
- Heat butter and oil in skillet then add shallots and garlic.
- Cook stirring occasionally for 5 minutes or until soft.
- Add wine to pan and boil until reduced by half.
- Cut each scallop into 2 slices then add to skillet and cook stirring occasionally for 3 minutes.
- Stir in lemon juice, parsley, salt and pepper then garnish with parsley and serve immediately.
