Lemon Meringue

- 1 cup white sugar shopping list
- 2 tablespoons flour shopping list
- 3 tablespoons cornstarch shopping list
- 1/4 teaspoon salt shopping list
- 1 1/2 cup water shopping list
- 2-lemons zested/juiced shopping list
- 2 tablespoons butter shopping list
- 4 egg yolks beaten shopping list
- pie shells baked as per package instructions shopping list
- Meringue shopping list
- 4 egg whites shopping list
- 6 tablespoons white sugar shopping list
How to make it
- Preheat oven to 350
- Lemon Filling:
- In medium saucepan, whisk together one cup sugar, flour, cornstarch and salt.
- Stir in water, lemon juice and lemon zest.
- Cook over medium heat, stirring frequently, until mixture comes to a boil.
- Stir in butter.
- Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture.
- Whisk your egg yolks and hot sugar mixture back into remaining hot sugar mixture.
- Bring to a boil and continue to cook while stirring constantly until thick.
- Remove from heat.
- Pour filling into baked pastry shells.
- Meringue:
- In Large glass or Metal bowl-whip egg whites until foamy, add your sugar gradually, continue to whip until stiff peaks start to form, spread over pie.
- Bake pie in oven for about 10 minutes or until a nice golden brown.
