Cranberry Almond Biscotti

- 2 3/4 cup flour shopping list
- 1 1/2 cup sugar shopping list
- 1/2 cup butter shopping list
- 2 1/2 tsp. baking powder shopping list
- 1 tsp. salt shopping list
- 1-12 oz. Pkg. white chocolate chips shopping list
- 2 cups almonds, toasted and chopped shopping list
- 2 eggs shopping list
- 1/4 cup orange juice shopping list
- 1 tbsp. orange peel shopping list
- 1 tbsp. vanilla extract shopping list
- 1 tbsp. almond extract shopping list
- 1 1/2 cups (6oz.) dried cranberries shopping list
How to make it
- Beat butter and sugar in a large mixing bowl. Mix together eggs, orange juice, and extracts. Mix into butter mixture. Add in flour, baking powder, and salt. Stir in almonds, white chocolate chips, orange peel and cranberries.
- Divide dough into thirds and roll each into a log, 12-inches long and 2-inches wide. Place on greased baking sheet. Bake at 350 for 25-30 minutes. Remove logs from oven and cool 2-3 minutes. Cut each log into 3/4-inch slices and place each slice on its side on the baking sheet. Bake at 300 for 10-15 minutes longer, depending on how crunchy you like them. Makes 4 dozen
