Madeira Tuna Steaks Recipe
This recipe comes from the Hardy Estate in Anna, Texas that I purchased in 1990.

Ingredients
  • 1 large garlic clove peeled and quartered
  • 1 teaspoon kosher salt
  • 1/2 teaspoon crumbled leaf oregano
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup olive oil divided use
  • 2 pounds fresh boneless tuna cut into 4 steaks
  • 4 large bay leaves do not crumble

Directions
  1. Using a mortar and pestle pound garlic, salt, oregano and black pepper to a paste.
  2. Blend in 1 tablespoon of the olive oil then rub mixture on both sides of each tuna steak.
  3. Lay steaks in baking dish then drizzle with 1/4 cup of the remaining oil then tuck in bay leaves.
  4. Cover and marinate in refrigerator 24 hours.
  5. When ready to cook heat remaining olive oil in large heavy skillet over high heat for 3 minutes.
  6. Add tuna and brown 3 minutes on each side keeping the heat high then serve hot.

I'm giving this 5 forks and I haven't even tried it yet. But it looks so good, and it's so easy I can't even mess it up. I'm off to the kitchen right now to make up the marinade.

This, combined with quinoa as a side dish will be my dinner tonight!!
