How to make it

  • Unwrap cream cream cheese and let sit in bowl to soften (about 1 hour)
  • Finely dice red pepper
  • Finely chop bunch spring onions
  • Drain artichoke hearts and reserve about a 1/4 cup juice
  • When cream cheese is soft, add salt, pepper, worcestershire, tabasco
  • With wooden spoon or potato masher combine ingredients and mash cream cheese into a softened paste. Add retained artichoke juice if needed.
  • Add Mayo
  • Mix some more
  • Add all grated cheeses
  • Add onion and bell pepper, mix well
  • Add artichokes last, since you do not want to beat them up and destroy them. Fold them in gently.
  • Pour into bread loaf pans (metal or pyrex) or casserole dish
  • Bake at 400 degrees Fahrenheit about 1 hour until bubbly and golden brown on top
  • Serve immediately with tortilla chips or sturdy bread
  • Its good cold on a sandwich the next day
