Hamburger Soup

- 2 green onions, leaves and all, sliced shopping list
- 1 lb. lean ground beef shopping list
- 2 T. butter shopping list
- 1/8 of a cabbage, finely sliced shopping list
- 2 ribs of celery, chopped shopping list
- 1½ c. cooked brown rice shopping list
- Small can (15 oz.) of diced tomatoes shopping list
- 6 c. water shopping list
- 2 handfuls of sun dried green beans shopping list
- salt – about 2-3 tsp. shopping list
- black pepper shopping list
- garlic powder shopping list
- onion powder shopping list
- 2 Tbsp. fresh cilantro, chopped, for a garnish shopping list
How to make it
- In a large soup pan melt the butter (or cooking oil). Add the ground beef and diced green onion.
- When beef is browned, add remaining ingredients. All quantities are approximate, and substitutions are fine. It's a vegetable soup, so use what you have -- corn, fresh tomatoes, fresh beans, leftover rice.
- Bring the soup to a boil then reduce the temperature to a very low simmer.
- Simmer covered for about an hour or more, until the vegetables are very tender and the flavors are well blended.
- Add salt and seasonings to taste and simmer some more.
- Serve garnished with cilantro. Accompany with bread and butter for a hearty one-dish meal.
