How to make it

  • In a large soup pan melt the butter (or cooking oil). Add the ground beef and diced green onion.
  • When beef is browned, add remaining ingredients. All quantities are approximate, and substitutions are fine. It's a vegetable soup, so use what you have -- corn, fresh tomatoes, fresh beans, leftover rice.
  • Bring the soup to a boil then reduce the temperature to a very low simmer.
  • Simmer covered for about an hour or more, until the vegetables are very tender and the flavors are well blended.
  • Add salt and seasonings to taste and simmer some more.
  • Serve garnished with cilantro. Accompany with bread and butter for a hearty one-dish meal.
