I got this recipe from an old English cookbook (McDougall's Cookery Book) printed I think in the 1940's. For the icing I just mixed some icing sugar and warm water together and spread on top and garnish with a 1/2 maraschino cherry

Ingredients
  • 1 pkg. 12 - frozen 3" tarts shells
  • 2 oz butter
  • 2 oz castor sugar (superfine sugar NON icing sugar)
  • 1 egg
  • 1 oz. breadcrumbs
  • 1 oz. self raising flour
  • a little Lemon juice
  • 1/8 tsp almond flavouring
  • raspberry jam
  • a few ground almonds.

Directions
  1. Preheat oven to 390°F
  2. put a layer of jam on the bottom of each tart shell then a layer of ground almonds
  3. cream the butter and sugar together and beat in the egg and breadcrumbs, add the almond flavouring and the lemon juice
  4. divide the mixture into 12 and spoon into the tart shells
  5. bake on middle shelf for 20 minutes
  6. allow to cool completely before icing
