Skirt Steak Recipe
Skirt steak is both inexpensive and extremely juicy. Brown mustard and blue cheese dressing give it an extra zing - an easy, and delicious meal.

Ingredients
  • 2 pounds beef skirt steak
  • 1 cup blue cheese dressing (this is optional)
  • 1/3 cup spicy brown mustard, prepared
  • 2 tbsp lemon juice
  • 1 pinch of salt and pepper (to taste)

Directions
  1. Combine mustard and lemon juice in a large bowl. Remove most of the fat from the steaks, and apply the mustard marinade. Put into a resealable bag, and marinate (in the refrigerator) for at least 1 hour. (up to 24 hours.)
  2. Preheat a large skillet, or grill on medium-high heat.
  3. Fry, or grill the steaks for around 5 minutes per side, (or to your desired doneness.) Remove, and let rest for 5-10 minutes to allow the juices settle. Cut the steaks, along the grain, into 3 or 4 pieces. Serve with blue cheese dressing.
