How to make it

  • Combine mustard and lemon juice in a large bowl. Remove most of the fat from the steaks, and apply the mustard marinade. Put into a resealable bag, and marinate (in the refrigerator) for at least 1 hour. (up to 24 hours.)
  • Preheat a large skillet, or grill on medium-high heat.
  • Fry, or grill the steaks for around 5 minutes per side, (or to your desired doneness.) Remove, and let rest for 5-10 minutes to allow the juices settle. Cut the steaks, along the grain, into 3 or 4 pieces. Serve with blue cheese dressing.
