Ingredients
  • 3 Cups Apple cider
  • 3 Cups Sugar
  • 1/3 cup Dried sweetened cranberries
  • 1/2 Orange sliced thinly
  • 1/2 Lemon sliced thinly
  • 1/2 Tbs Allspice berries dried
  • 1/2 tsp. Whole cloves
  • 1/2 tsp. Anise seeds
  • 8 inches of Cinnamon stick
  • 1 box Powdered pectin (1.75 oz.)

Directions
  1. Combine everything together except for the pectin and sugar (Follow the directions with the pectin for addition of the sugar and pectin powder).
  2. Bring the mixture to a boil and then reduce heat to a simmer and simmer covered for 30 minutes.
  3. Strain the mixture off and begin to process per instructions from the pectin manufacturer.

  7. Dissolve the pectin into the fruit juice and bring to a roiling boil over high heat.
  8. Add the sugar and return to a boil cooking over high heat until the mixture reaches 235*F
  9. Skim off foam and pour into prepared 1/2 pint canning jars. (4 1/2 jars).
  10. Process in boiling water canner for 5 - 15 minutes depending on elevation (specified in pectin instructions.)
  11. Let jel overnight.
