How to make it

  • Combine everything together except for the pectin and sugar (Follow the directions with the pectin for addition of the sugar and pectin powder).
  • Bring the mixture to a boil and then reduce heat to a simmer and simmer covered for 30 minutes.
  • Strain the mixture off and begin to process per instructions from the pectin manufacturer.

  • Dissolve the pectin into the fruit juice and bring to a roiling boil over high heat.
  • Add the sugar and return to a boil cooking over high heat until the mixture reaches 235*F
  • Skim off foam and pour into prepared 1/2 pint canning jars. (4 1/2 jars).
  • Process in boiling water canner for 5 - 15 minutes depending on elevation (specified in pectin instructions.)
  • Let jel overnight.
