The idea of making biscotti in a closed-edge pan never occurred to me until I found this recipe in one of the women's magazine from the grocery. It has brought making these twice-baked cookies into a DIY project for me.

Ingredients
  • 6 large eggs
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 2 teaspoons baking powder
  • 3/4 teaspoon anise extract

Directions
  1. Line a 13x9x2 pan with foil, overlapping the ends of the pan.
  2. Line foil with greased waxed paper.
  3. Preheat oven to 350 degrees F.
  4. Beat eggs well with mixer.
  5. Add the sugar and beat well
  6. Add the flour, oil, baking powder and anise.
  7. Beat well.
  8. Pour batter into prepared pan.
  9. Bake for 10 to 15 minutes OR until golden.
  10. **You need to watch since they "turn" quickly.
  11. Test for doneness with a toothpick.
  12. Remove from oven.
  13. Remove from pan.
  14. Slice on a diagonal.
  15. Place on cookie sheet.
  16. Brown both sides until golden.
